This week's writer fuel recipe is delicious and homey, and best eaten while the tonkatsu is still fresh and crispy. Writer Fuel Recipe: Tonkatsu Sandwich Ingredients: 1 thin-sliced fresh pork chop 1tsp white flour 1 egg, beaten 2 tbl panko crumbs 1 cup peanut or vegetable oil (for frying) 2 slices whole wheat bread One leaf of lettuce or shredded cabbage 1 tbl mayo (Kewpie is really good) Tonkatsu sauce as condiment Writer Fuel Recipe: Tonktasu Sandwich Instructions: Heat your oil in a pan to medium-high heat. Coat cutlet completely in flour first, then the egg, then the panko. Fry the cutlet in oil (flipping when bottom is golden brown) until heated through to a safe-to-consume temperature. Set cutlet on paper towel or rack to drain grease. Toast bread (optional), then spread mayo on both sides. Place cutlet on the bread, drizzle with tonkatsu sauce and add lettuce/cabbage. Enjoy! Have you had a 'katsu sando' before? If so, how do you like it? Photo is of the tonkatsu sandwich at the Studio Ghibli Museum cafe in Tokyo (I took the photo myself, June 2019).
