With Christmas coming this week I want to share one of my favorite 'light and flavorful' recipes: Dairy-Free Rainbow Pizza!
Writer Fuel Recipe: Dairy-Free Rainbow Pizza - Ingredients:
1 pizza crust (mix preferred)
1/2 cup red pasta sauce of your choice
1/2 green bell pepper, sliced thin
1/2 red bell pepper, sliced thin
1/2 orange bell pepper, sliced thin
2 white mushrooms, sliced thin
1/4 fresh tomato, peeled & diced
1/4 cup drained pineapple pieces
Dried basil, oregano, garlic powder, & onion powder
**Optional: 2 tbl Tofutti 'Better than cream cheese'**
Writer Fuel Recipe: Dairy-Free Rainbow Pizza - Instructions:
Preheat oven to 375 degrees
Make your crust according to the mix instructions.
If you're using the Tofutti non-dairy cream cheese, spread it evenly on the crust before adding sauce.
Once you've added the sauce, scatter your toppings generously over the sauce.
Sprinkle a pinch of each herb over the veggies.
Bake as per your crust mix instructions until crust is cooked through and the veggies are tender when poked with a fork.
