Sparing you the backstory of how these came to be and why I love them, here is the recipe for today's writer fuel recipe: Tex-Mex Sweet Potatoes! Ingredients (Makes 4) 4 Large Sweet Potato (washed) 1/2 lb ground chicken or beef (optional) 1 packet taco seasoning 1 oz can tomato sauce 1 green bell pepper, washed, de-seeded, and diced 1/2 tbl olive oil Condiments as desired (salsa, pico, nacho cheese, cheddar cheese, sour cream) Writer Fuel Recipe: Tex-Mex Sweet Potations - Instructions -Wrap the potatoes in foil and bake on 400 until smushy when squeazed (30-45 minutes on average). -In a medium soup pan, if using ground chicken or beef, cook meat over medium-high heat until meat reaches a safe temp (see package for details). Drain grease and set aside. - in a medium skillet, stir-fry green bell pepper until tenderness you prefer. -add meat (optional), tomato sauce, and taco packet to the skillet and simmer over low for 10 minutes. -slice baked sweet potato, top with 1/4 of the meat/peppers. -Top with condiments as you prefer, and enjoy!
