If you're a chili lover (especially for things like chili dogs in the summer), here is a new writer fuel recipe: Four-Bean Vegetarian Chili! As always, let's skip the boring backstory and get straight to the good stuff... the food!
This recipe is a slow-cooker recipe, but can be adapted to use on the stove in a pot on low heat.
-1 can black beans, drained and rinsed
-1 can cannellini beans, drained and rinsed
-1 can 'hot chili beans' (pinto beans stewed in chili seasoning), drained but NOT rinsed
-1 can red kidney beans, drained and rinsed
-32 oz tomato sauce
-1 can chili-ready tomatoes
-1 package of you favorite chili seasoning mix
-Turn your slow cooker on high heat
-Combine all ingredients and stir well
-Allow to simmer for 4-6 hours on high heat, stirring about once an hour
Serves best with jalapeno cornbread, or (if you eat dairy) sour cream and cheese.
